From the sublime to the almost ridiculous, we pioneered barbecuing exotic and home-grown ‘pests’ in exotic pop-up restaurants. Serving up delicious barbecued, sweet-chilli pigeon burgers, wasabi weaver ants, marinated grasshoppers, crunchy crickets and chocolate dipped bugs to a bemused and sceptical but surprisingly satisfied crowd.
With an ethical message behind this unusual foodie venture, the scarcity of high-quality protein resorts two billion people worldwide to supplement their diets with insects – if pestaurants became popular, we could help solve this global resource shortage.
